As a side note I should mention that we had a massive wind/rain storm blow through (no pun intended) last night, and I am riding on about 4 hours of sleep. It was so loud in my room that I found myself at 2:30am crawling into the sheet-less guestroom bed because I needed it to stop waking me up every 10 minutes. Come to find out that awful noise was a combination of where my room is (I have two outside walls) AND part of the siding decided it no longer wanted to be part of the house.
I should really take a nap. But instead I am writing about food, then heading to the gym (let's hope I don't fall asleep on the elliptical).
Okay then. Food.
I don't have the greatest history with food. When it really should be used as nourishment, I have used it as the emotional crutch that soothes the soul when I am sad, happy, depressed, anxious, you name it. However, I am happy to report that connection is starting to fray.
This week has been a mix of good habits and bad habits. One of those good habits was eating a nice, healthy breakfast.
KALE AND EGGS.
I used 2 tsp of coconut oil, add about 1-2 cups of fresh kale, and sauteed it for just a little bit to soften it. Then I made a small well in the middle, cracked 2 eggs in it, lowered the heat, covered the pan and let the eggs set to desired consistency. (I happen to like my yolks runny, so it was about 5 minutes covered over med-low heat). Slide it out of the pan, sprinkle some salt and pepper over it. Enjoy.
It is like having kale chips and sunny side up eggs. I eat mine with a little Sriracha hot sauce. A side of a banana and coffee with skim milk rounds out it out!

Wow sounds awful! We don't get a lot of wind storms over here but I can't imagine how loud it must be at night. I never thought of that but I can see it being the type of thing that can totally drive you crazy!
